Time to dust off my cook books

With more time on my hands, I am spending not only more time thinking about food but more money on food. My slow cooker has been put away for a bit and with all the lovely weather I have been craving more crunch - especially salads. It is wonderful to hear that so many people are baking again. I am afraid this isn’t really a skill of mine as I am a lazy cook and hate having to put anything on scales – period?! Time to dust off my cook books and get a little creative  - Roast aubergine parmigiana tonight. Yummy!
